The workshop
It all started in 2019 in a garage in Croix-Rousse, where Léo Vasseur built his first smoker out of an old oak barrel. A former brasserie cook, he fell in love with barbecue during a summer spent in Texas — and came back to Lyon with one idea in mind: bring real low-and-slow smoking to his city.
Today, BRAISE occupies a restored former weaving factory. The exposed brick, paper lanterns and solid wood tables still carry that early workshop spirit. In the kitchen, nothing has changed: every cut spends between 8 and 14 hours in the smoker before it reaches your plate.
